In addition to being a Cordon Bleu-certified chef, Michelle has enrolled in cooking classes in Italy. After cooking at the 5-Star Mary Elaine’s at The Phoenician resort in Scottsdale, Arizona, she was commissioned as a private chef for a real estate developer in Paradise Valley, Arizona where guests included professional athletes and English royalty. She has written the top-selling cookbook on Amazon, Clean Eating for Busy Families, revised & expanded, and is the Dish with Dudash columnist for The Arizona Republic and USA today Network. She has also contributed recipes to Food Network and Men’s Journal, to name a few. She has recently shared her weight loss tips on “The Rachael Ray Show,” foods for sleep tips on OprahMag.com, and healthy travel snacks in The Washington Post.
Food brand clients include The Wonderful Company, California Prunes, and California Avocado Commission, just to name a few, for who Michelle has developed recipes, appeared on television, presented to audiences including Registered Dietitians and fitness professionals, and appeared in television and print advertising.
Michelle has presented at various conferences, including Today’s Dietitian Symposium three years in a row, Academy of Nutrition and Dietetics, International Association of Culinary Professionals, Restaurant Leadership Institute, and Oldways Supermarket RD Symposium.

The 3-month term includes (in-person or virtual):
Whole foods in their least processed state, since they are more satisfying, are higher in satiating fiber, higher in disease-fighting phytonutrients, and free of added sugars, added sodium, and dangerous added trans fats.
The plate. Michelle stresses the importance of protein and fiber at every meal and snack. Plus, whole grains, fruit, nuts and seeds, nutritious oils, and plenty of vegetables. Michelle leans toward the Mediterranean way of eating. Yes, that can include alcohol.
Evidence based. Michelle is a credentialed Registered Dietitian Nutritionist. She has a Bachelor of Science degree in Dietetics (study of nutritional and food science), completed 1,000 hours of supervised practice, passed the RD exam, and completes 75 hours of continuing education every five years too maintain her credential.
Michelle learned first-hand how the scarcity diet mentality not only doesn’t work long-term, it backfires. Loading up on artificial sweeteners, diet drinks, extreme packaged fat-free and low-calorie foods, and counting every single calorie can leave you with the feeling of deprivation, wanting even more food in the end. Michelle weighs 25 pounds less now on her plan compared to her 20s when she had the diet mentality. Now, she is fueled properly to excel in sports, run a business, and manage family life with young children.
