Creamed Spinach Recipe
While simple sautéed spinach with garlic is frequently on my stovetop, I like to mix it up every once in awhile. This recipe rivals steak house creamed spinach, but is much lower in saturated fat, cholesterol and calories. If you’re a lover of goat cheese, substitute spreadable Chevre for the cream cheese.

Good substitute for heavy cream or butter! I also used light cream cheese in a recipe modification challenge I did in undergrad. We did a riff on a creamy alfredo and our clients prefered the light version to the cream/butter.
Carlene,
Good to know about the creamy alfredo. I may try that technique for an alfredo recipe I’ll be starting on soon.
Thanks!
